ON THIS WEEK’S episode of Dinner SOS, test kitchen director and host Chris Morocco is joined by Dan Pelosi, author of the cookbook Let’s Eat: 101 Recipes to Fill Your Heart & Home, to assist Liliana in making meals that can feed a crowd (while satisfying her family’s many dietary restrictions).

Liliana lives with her husband and two sons who are recent college graduates. One of her sons has a dairy allergy and can’t eat salmon; Liliana has an issue with sodium; and vegetables like brussels sprouts, asparagus, avocado, and peas are not fan favorites. Her first thought is that she needs one-pot casseroles she can make-ahead and don’t require much cleanup. Most essential of all is finding protein-heavy dishes that are frankly geared towards carnivores since that is what her sons mainly crave.

Chris recruits Dan Pelosi, also known as GrossyPelosi on Instagram, who grew up in an Italian-Portuguese family and is no stranger to feeding a crowd. Because casseroles can be dairy-heavy, Chris and Dan both lean into slow-cooking meaty braises. Dan suggests his Early Dismissal Pot Roast, a recipe in his cookbook that’s all made in one pot, requires only 20 minutes of active cooking, and then roasts slowly in the oven for three to four hours. It also reheats really well the next day, which means it’s a perfect domino dinner—a brilliant term that Liliana uses to describe recipes that yield leftover protein to use in stir-fries, fried rice, or empanadas all week long.
