Gochujang Yogurt Chicken Recipe | Bon Appétit

Don’t be surprised if this becomes your new go-to weeknight chicken dish. The marinade features a host of winning pantry ingredients you likely already have on hand: yogurt, gochujang, soy sauce, and maple syrup. A smack of freshly grated garlic joins in to make a delicious spicy-savory-sweet marinade you’ll find yourself using on everything. (Yes, in fact, you can reserve a small portion to thin out later to become a nice drizzling sauce over the cooked chicken. More on that below in the recipe instructions.)

Yogurt is a powerful tenderizer, so even just 20 minutes of marinating time while you prep the rest of dinner is enough to imbue flavor into the meat. The yogurt also helps to temper the heat from smoky-spicy gochujang, the assertive and versatile Korean hot pepper paste. If you have the time, an overnight rest in the fridge is even better. Lean on my favorite go-to broiler for a quick cook with minimal cleanup. These chicken thighs take very well to batch-cooking at the start of the week and enjoying in the ensuing days. They are great with rice, over salad, in a wrap, or even just cold out of the fridge (who, me?).
